Hi and welcome to the forum...
I'm guessing you are changing the tranny because something is wrong with it?
Or are you wanting to go automatic?
Myself... I'd get the one you have rebuilt or find the same thing in a junk yard and slap it in. New clutch kit also...

If you're looking for more speed you're gonna want to change the ring and pinion gears in the rear. You say 3.73 to 1 are in it now... correct? If you go much more in the speed direction... (smaller number in the ratio = higher top end) you will sacrifice torque.
Trucks were never really meant for flying around so most came with 3.73 to 1 or 4.11 to 1 gears in them. Probably depends a lot on the area in the country too. Hilly areas the 4.11's are nice. Flat landers can go to the 3's.
Far as the granny 1st goes... I never use first except when I park it. The first gear in these old trucks is just for decoration.

I wouldn't change anything... Especially in an old pick-up... They don't handle well enough for me to feel comfortable in an old Ford going a hundred.
You might want to consider one of those two speed gear box gadgets that somebody out there sells. Gives you a high and low range with what you have. You can run regular or or change the box to a sort of overdrive mode.
Might also be able to find a 5 speed out of something newer with overdrive that'll bolt up with little or no modifications?

It's not cheap but since ya asked - look into a Quicktime bellhousing and a Tremec TKO-500. Alternatively, a Gear Vendors Overdrive.

Here are a few threads that explain what I did. Least expensive, using original ford parts, and very simple if you're already are running a 4 speed.
